Foraging for Magic: Hawthorn’s Heart Wisdom & Cordial Recipe

Updated: Sep 29, 2025

As autumn settles over Gower, the hedgerows glow with clusters of bright red berries, hawthorn, or haws. These small gems appear after the soft white blossoms of spring are gone, and their arrival marks a turning of seasons.

A Medicine of the Heart

Hawthorn isn’t just beautiful, it carries deep medicine. Physically, it’s been used for centuries to support circulation and heart health. Emotionally and spiritually, hawthorn is a balm for the soul: reassuring us after betrayal, comforting in grief, opening us toward compassion and self-love. In folklore, it stands as protector and healer, guarding both our boundaries and our openness.

Walking along a hedge, if you pause beneath a hawthorn’s boughs, you can sense that balance: the sharp protective thorns, yes, but also the generosity of fruit for body and spirit. It reminds us that strength and gentleness can coexist.

Where to Find It & How to Use It

On Gower, you’ll find hawthorn in hedgerows, woodland margins, and coastal paths. Look for lobed leaves, thorned branches, and scarlet berries lingering into late autumn and even winter.

You can enjoy hawthorn in many ways: made into jellies, syrups, teas, tinctures, or, as I’m sharing today, a warming Hawthorn Cordial. Perfect to sip, share, or use in small amounts to soothe and nurture the heart.

Recipe: Hawthorn Cordial

This cordial blends hawthorn’s nourishing heart qualities with warming spices and herbs. Take a little after the evening meal or mix with sparkling water for a gentle tipple.

Ingredients

  • A few generous handful of hawthorn berries

  • 1 small piece of fresh ginger, chopped

  • 1 tsp ground cinnamon

  • 1 apple, chopped

  • 1 tbsp honey

  • Juice of 1 lemon

Method:

  1. Chop the ginger and apple into small pieces.

  2. Place the hawthorn berries, ginger, cinnamon, apple, and honey into a saucepan.

  3. Cover with water and bring to the boil. Reduce the heat and simmer gently for 45–60 minutes until softened.

  4. Allow to cool slightly, then strain the liquid through a muslin or fine sieve into a clean jug or bowl.

  5. Stir in the lemon juice, then pour into a sterilised jar or bottle.

  6. Store in the fridge and enjoy as a warming tonic or diluted with hot water.

Use as you would any other cordial - around 1 part cordial to 5 parts water. Try it chilled with sparkling water for a refreshing lift, or enjoy warm as an autumnal, heart-opening tonic.

The Magic Behind the Cordial

  • Heart nourishment: The hawthorn berries bring flavonoids and gentle cardiovascular support.

  • Spiritual comfort: The spices - ginger, cinnamon, cardamom, vanilla - warm and uplift. Hibiscus adds a touch of rose-like comfort.

  • Healing ritual: The act of gathering, preparing, waiting, and finally using the cordial becomes a ritual of patience, self-care, and connection to nature’s cycles.

Closing Thought

The hawthorn teaches us that to protect the heart isn’t to shut it off, but to hold it with kindness. To nourish it. To allow space for both vulnerability and strength. As you taste this cordial or wander the hedgerows, remember: healing grows when we both shield and open, when we feel deeply and rest gently.
